Beef Jerky for Breakfast? 

They say breakfast is the most important meal of the day, and we couldn’t agree more — which is exactly why we recommend adding a serving of beef jerky to every single meal. All joking aside, we recognize that dried meat is not at the top of the breakfast list, but we’d like to introduce a few recipes that may change that. Enter Machaca and the dish Machaca con Huevos.

From the Spanish word machacar, to smash or crush, Machaca is dried & shredded beef. A staple of Northern Mexican cooking — including the states of Sonora, Sinaloa, and Nuevo León — Machaca has been used for hundreds of years as a naturally preserved food. As Mexican cuisine authority, Diana Kennedy, suggests—“before the days of refrigeration, the only way of preserving beef in the arid cattle states of North and Northwestern Mexico was to make beef jerky. The meat was cut into thin slices, sprinkled with lime juice and salt, and then hung up in the sun to dry. It was then pounded into shreds and became carne machacada."

The Machaca is reconstituted with a mix of oil, onions, peppers, tomatoes, and then folded into eggs. Surprisingly simple, but loaded with flavor, this recipe offers both a healthy and satisfying breakfast option.

Machaca Con Huevos

INGREDIENTS 
  • 1 oz. People's Choice Machaca
  • 3 tablespoon olive oil
  • 1/2 cup onion, chopped
  • 1 roma tomato, chopped
  • 5 eggs
  • 1/4 jalapeño, diced
  • Optional Garnish: Chopped Onions, Cilantro, Cheese
DIRECTIONS
  • In a large skillet, heat up olive oil. Add onions, tomato, jalapeño and Machaca. Meanwhile, whisk eggs until well mixed. Add eggs to skillet and cook until eggs are cooked thoroughly.
  • Serve with garnish of your choice. Enjoy!
