Ingredients
Directions
Dice all veggies, heat skillet on medium heat, add 1 tbsp avocado oil. Allow veggies to cook down for 3-5 minutes, add in machaca, turn heat to low.
In a medium bowl, crack eggs and beat with fork for 1-2 minutes, slowly add beaten eggs into pan, allow eggs to cook for 3-5 minutes while scrambling with cooked veggies and Machaca.
Directions For Frying
Heat a separate skillet on medium heat, add 1-2 tbsp avocado oil. Cut the flatbreads into two, add cooked Machaca egg scramble, seal the edge of the flatbread with cream cheese, place taquito into warm skillet, allow to crisp for 1 minute and slowly roll to crisp taquito all around.
Repeat the same process with the other taquitos. Remove taquito from skillet, serve with a delicious side of salsa verde.
Pro Tip - Use cream cheese on the inner side of the flatbreads when stuffing and frying to help keep all the yumminess inside, fry facedown first to help secure everything in place, check the second picture to see how perfect that seal is.
