We employ an old-school style of jerky making. This means we do not use any artificial ingredients or overly process our jerky into submission. Rather, we dry our jerky a bit more than other companies. This keeps the jerky as natural as possible.
We don't lean on fancy machinery, artificial ingredients, tricks or shortcuts. It might not be the easy way, but it's the right way. You'll never find two pieces that look exactly the same, and this is how we like it. It's the reason our jerky tastes like it was made in your kitchen, not in a factory. We believe jerky with a little variability between each piece is a good thing. It celebrates the all-natural, unprocessed nature of real food.

While we try to maintain our jerky as lean as possible, because we use all-natural meat, there is some variance in the fat content of each piece. During the packaging process, when the product is packed air-tight, it pulls some of the natural fat content onto the exterior surface. This is a completely normal occurrence and does happen from time to time. The product is completely safe to eat.

The occurrence of mold is one of the potential drawbacks of a preservative-free product. The presence of one slightly undried piece can lead to the spoilage of an entire bag. In no way does this have anything to do with the quality of the meat as we use nothing but the most natural ingredients. Just an unfortunate occurrence from time to time.
