Great for breakfast, lunch, or even dinner, these crispy tacos are easy to incorporate into any meal plan whether you’re following a carnivore diet or a ketogenic diet or both!
The carnivore diet does NOT need to be boring and it definitely won't be after you learn about our secret breakfast ingredient: Machaca!
What is Machaca?
Machaca is commonly known as beef jerky chew. To make our Machaca, we use thick cuts of 100% American beef and season them with a rich medley of natural spices including black peppercorns, sea salt, and smoked paprika. The beef is then slow-cooked for at least 5 hours. Once dried, the thick-cut jerky is shredded to a fine & airy consistency.
We use just 2 pounds of seasoning for every 100 pounds of beef, making this a fantastic carnivore diet option. Machaca is great for on-the-go snacking and it's also perfect for Machaca Con Huevos–which means "shredded with eggs" in Spanish–a dish that consists of shredded dry beef, scrambled with eggs!

Carnivore Diet Breakfast Tacos
INGREDIENTS:
- 8 strips of bacon, cut in half
- Reserved bacon fat (2 Tbsp)
- 1 oz. People's Choice Machaca
- 4 eggs
- Optional: Salt and shredded cheese
DIRECTIONS:
1. Preheat your oven to 400 degrees Fahrenheit.
2. Lay 4 half strips of bacon down side by side on a lined baking sheet. This is going to be the base of your bacon weave tortilla.
3. Fold every other piece of bacon up and over itself.
4. Lay one piece of bacon down on top (crosswise), then fold the other bacon strips back down to create a weave.
5. Continue with the rest of the bacon until the bacon weave "tortilla" is complete.
6. Repeat steps with the remaining half-strips of bacon to create your second bacon tortilla.
7. Place a cookie sheet upside down and onto the bacon weave tortillas. This will prevent the bacon from curling up while cooking.
- Bake in a 400-degree oven for 25-30 mins until crispy.
- Remove, and let your low carb tortillas cool. Reserve all bacon fat.
- Using a large skillet, heat reserved bacon fat over medium-low heat.
- Add Machaca to your pan and stir to rehydrate. Cook for 3-5 minutes.
- Beat eggs until well mixed and add to the skillet.
- Add a pinch of salt (optional) and scramble until eggs are cooked through.
- Remove bacon tortillas from the oven. Allow to cool.
- Once cooled, fill your warm tortillas with the Machaca con huevos and top with grated cheddar cheese (optional).
