Keto Pepperoni Pizza Ingredients

Ingredients for The BEST Keto Pizza Recipe

Ready to cook? Here's what you'll need to make the best keto pizza recipe:

  • Shredded mozzarella cheese - Not only does this tasty cheese top the pizza, it's also a key component in this keto-friendly pizza dough. Melted mozzarella cheese acts as the gluten structure in this gluten-free pizza dough.
  • Cream cheese - The cream cheese is added to the dough as an additional binding agent in the fathead pizza dough.
  • Baking powder and an egg - These two ingredients combine to make this fathead pizza crust light and fluffy.
  • Almond flour - Besides adding the nutty flavor you're used to in crispy crust, almond flour adds volume and texture to the final dough.
  • Salt - Makes your pizza taste good!
  • Tomato sauce - If you're lucky enough to find high-quality tomatoes such as Bianco Dinapoli, all you need to do is add salt and blend. Otherwise, feel free to add some minced garlic for a flavor boost.
  • Basil - Sneak a little basil under the cheese or sprinkle fresh on top after the pizza comes out of the oven to get those classic Margherita pizza vibes on this low-carb pizza crust.
  • Extra Hot Mini Beef Sticks - Sliced thinly, People's Choice Flamin' Hot Mini Beef Sticks make the tastiest little pepperoni's around. Stock up and keep a couple of packages on hand for a quick snack or use as a versatile cooking ingredient.
  • Parmesan cheese - Finish this easy keto pizza with a sprinkle of freshly grated parmesan cheese for a final sprinkle of seasoning.

How To Make Keto Pepperoni Pizza

Start with the oven. Preheat the oven to 450°F. If you own a pizza stone, now is the perfect time to throw it into the oven and put it to good use. Set your stone on the middle rack before turning on the oven. This will allow the stone to come up to temperature with the oven and avoid creating potential cracks in the stone from thermal shock.

Melt the mozzarella and cream cheese in a microwavable bowl and stir to combine

Melt the cheese. To begin, you'll need to microwave the shredded mozzarella cheese and cream cheese for 45 seconds or until slightly melted. Then stir until the cheeses combine-it may seem tough at first but keep stirring, it will come together.

Add almond flour, baking powder, salt and egg to the melted cheeses and mix until incorporated

Add the remaining dough ingredients to the melted cheese. Next, add the egg, almond flour, baking powder, and salt to the melted cheeses and mix until incorporated. The dough should feel wet and sticky.

Carefully press the dough out with wet hands starting at the center of the dough ball to define the outer crust

Laminate the dough. Wet your hands to prevent sticking to the dough, and form the dough into a dough ball. Wet your hands again if needed and begin pressing the dough out with your fingers, starting at the center of the dough ball to define the outer crust.

For this first bake, carefully place your dough on a lined sheet pan, slide it into the oven and bake for 10 minutes

Bake the dough. This special low-carb dough will need to be baked twice: once for the crust to form and the next for the cheese and toppings to cook and melt. For this first bake, carefully place your dough on the pizza stone (or place on a lined sheet pan and slide into the oven) and bake for 10 minutes. Pull the pizza crust and set it on a cooling rack for topping.

Top your pizza, bake until golden brown delicious, and enjoy!

Top your pizza crust and begin the final bake. Top your pizza with the tomato sauce, basil, cheese, beef stick pepperoni, and bake for another 5-8 minutes, or until the crust is golden brown and the cheese is fully melted. Pull the pizza and enjoy!

Keto Pizza Recipe Tips

  1. Mix the cheese well after it has melted. This pizza crust begins with melting the shredded mozzarella cheese and cream cheese together in the microwave. Though, you can still make keto pizza without a microwave by using a nonstick pan and low heat. Just be sure to use a cold egg, and allow the cheese to cool down a bit before adding the egg to avoid scrambling. Mix until the dough is a silly putty consistency, and don't worry about overmixing–remember there is no gluten!
  2. Don't roll the dough out; press it out instead. This dough is sticky, so you'll want to wet or oil your hands before working with it. We highly advise against rolling this dough out with a rolling pin as the dough will stick. If you really want to roll the dough out instead of using your hands, place it between two sheets of parchment paper to prevent sticking.
  3. Add a few air holes. Use a fork to puncture tiny holes in the dough before baking. This will prevent air bubbles from disrupting the crust during your first bake.
  4. Bake before topping. Before topping, bake the crust for eight to ten minutes. This will ensure a golden brown, crisp crust. You'll end up with a soggy crust and overcooked toppings if you skip this step!
