Cauliflower is one of the most versatile vegetables. Not only is it a great Ketogenic alternative to the starchy ingredients you crave, but its high fiber content lends to improved digestive processes. With only 2.9 grams of net carbs, this delicious veggie is a clear winner on the Keto diet and the perfect alternative to a decadent comfort meal.

Now let's talk Mac and Cheese. I mean the creamy, ooey-gooey, rich kind, but not the one that packs on the carbs and starches. Yes, there is such a thing. We've crafted cheesy, melty goodness with a protein infused twist - our favorite Ketogenic Beef Sticks. 

Cauliflower Base

Cheese Sauce
  • 3 tbsp butter
  • 2 cup Cheddar Cheese shredded
  • 1/2 cup Heavy Whipping Cream
  • Salt/Pepper to taste
Baked Topping
  • 1/2 cup shredded Cheddar Cheese


Cauliflower Base

  1. Heat a skillet on medium heat and preheat the oven to 425 degrees.
  2. Use a knife to separate the cauliflower into "macaroni" noodle sized pieces. Add 2 tbsp of olive oil to the skillet. Add the cauliflower to the skillet and allow to cook for 8 minutes.
  3. Dice the onion, finely chop the garlic and add items to the skillet. Cook for 10 more minutes or until the cauliflower is cooked and the onions are translucent. You'll want to cauliflower to be slightly al dente so that it cooks the remainder of the way in the oven.
  4. Dice the People’s Choice Beef Jerky beef sticks into ½ inch pieces and add to the skillet. 

Cheese Sauce

  1. Combine butter (3 tbsp), cheddar cheese (2 cup), and heavy cream (½ cup)  in a small saucepan on low heat until everything is melted. Season to taste with salt and pepper.


  1. Place the cauliflower mixture into a baking dish.
  2. Pour the cheese sauce over top and mix everything together.
  3. Top with ½ cup cheddar cheese.
  4. Bake at 425 for 10 minutes and then broil for 3-5 minutes to crisp up the topping.
