A few months ago, we created our first fried rice recipe using our Mini Beef Sticks, and it was a hit. Now we're back with a keto-friendly fried rice option for those following a low-carb diet so nobody has to feel left out!
This fried rice recipe–along with the first recipe–was inspired by Lap Cheong Fried Rice. Lap Cheong is also known as "Chinese Sausage," which makes for some of the best fried rice you'll ever eat.
We decided to use our Sea Salt & Pepper Mini Beef Sticks in place of the Lap Cheong, but you can give our Flamin' Hot Mini Beef Sticks a try as well! Both options are entirely keto-friendly and carbohydrate-free.
If you view this recipe as a technique, you'll quickly see that the possibilities of keto fried rice variations is nearly infinite. So start experimenting, have fun with it, and be sure to tag us in your photos on Instagram!
The Process
First, add all seasoning sauce ingredients to a small bowl, mix to incorporate, and reserve for later use. Again, this is a recipe that is easy to customize so feel free to add or substitute ingredients in the seasoning sauce to fit your cravings!
Place a well oiled heavy bottomed pan or wok over medium-high heat. Scramble the eggs and reserve for later.
After this step, things will move quickly since the heat is medium-high. Be sure to stir consistently as not to burn anything in the process. Add more oil to the pan, followed by diced onions, and cook for 5 minutes or until fragrant and translucent.
Add Sea Salt & Pepper Mini Beef Sticks to the pan and cook for one minute. Add the cauliflower rice and seasoning sauce to the pan, give a good mix, and cook for two minutes while stirring.
Next, add the shredded carrots and frozen peas to the pan and cook for 5 minutes while stirring. Once the peas have cooked through, add the reserved scrambled eggs and give a quick mix to incorporate. Take the pan off the heat and garnish with scallions and sesame seed.
Enjoy!
