Keto Cauliflower Mac and Cheese with Keto Beef Sticks
Keto diet has become a very popular diet and we are happy to contribute a fun delicious Mac and Cheese recipe!
2 large cauliflower heads
2 packs of People’s Choice Beef Jerky Salt and Pepper Beef Sticks (can substitute Flamin' Hot Beef Sticks for an extra kick or mix both packs!)
1 large onion
2 cloves garlic
2 tbsp olive oil
3 tbsp butter
2 cup Cheddar Cheese shredded
1/2 cup Heavy Whipping Cream
Salt/Pepper to taste
1/2 cup shredded Cheddar Cheese
Heat a skillet on medium heat and preheat the oven to 425 degrees.
Use a knife to separate the cauliflower into "macaroni" noodle sized pieces. Add 2 tbsp of olive oil to the skillet. Add the cauliflower to the skillet and allow to cook for 8 minutes.
Dice the onion, finely chop the garlic and add items to the skillet. Cook for 10 more minutes or until the cauliflower is cooked and the onions are translucent. You'll want to cauliflower to be slightly al dente so that it cooks the remainder of the way in the oven.
Dice the People’s Choice Beef Jerky beef sticks into ½ inch pieces and add to the skillet.
Combine butter (3 tbsp), cheddar cheese (2 cup), and heavy cream (½ cup) in a small saucepan on low heat until everything is melted. Season to taste with salt and pepper.
Place the cauliflower mixture into a baking dish.
Pour the cheese sauce over top and mix everything together.
Top with ½ cup cheddar cheese.
Bake at 425 for 10 minutes and then broil for 3-5 minutes to crisp up the topping.
