While we imagine ourselves cozying up under a blanket on a chilly weekend morning, in reality, we live in sunny Los Angeles where the possibility of the weather dipping below 70 degrees is an anomaly. But that's not to say it won't hold us back from baking seasonal favorites.
For us, September is all about Machaca. So we thought it would be a great addition to one of our savory bread recipes. Its light and airy texture incorporates well into the batter while also adding a nice saltiness.
This soft, tender bread capped with melted Cheddar Cheese is perfect to serve with winter soups and chilis. The spiciness of the Jalapeño compliments the savoriness of Machaca and will warm you right up on a chilly Fall night. This comfort recipe will become a Fall staple for years to come.
Preheat the oven to 350F. Lightly grease and the 9-in loaf pan with olive oil spray.
In a large bowl, whisk melted butter, eggs, milk, and vinegar until smooth.
Add flour, baking powder, baking soda, salt, and sugar, gently mixing until a smooth batter forms.
Fold in cheese, Jalapeño and People's Choice Machaca.
Scrape the batter into the prepared loaf pan and smooth out the top. Bake the bread at 350F for 45-50 minutes or until golden-brown and a toothpick tests done. Cool completely in pan, then transfer to a wire cooling rack.
As an added bonus, add 1/2-1 cup (depending on how cheesy you want it) to the top of the loaf about 10 minutes before it's done cooking for extra cheesy goodness!
