If you're anything like me, eating pizza and binge-watching Netflix are two of your favorite things. As an amateur sous chef (to my mom) and a devoted foodie for life, I recently indulged in David Chang's Ugly Delicious, a Netflix series following the award-winning chef on his cross-cultural expedition for the world's most delicious food. Five minutes into Episode 1: Pizza, I was hooked.
Now I will be the first one to admit that I am at best mediocre when it comes to the kitchen, however, with a little direction I can deliver. Thanks to my brother's cooking skills and David Chang's expertise, we decided to embark on our own pizza quest.
Machaca Mushroom Pizza
A twist on a classic!
In a pan, sauté onions and cremini mushrooms in olive oil over medium heat until caramelized. Form pizza dough by hand into a 12" circle and place on a wooden pizza peel. Do not use a rolling pin as this will flatten the dough and make it dense.

Drizzle olive oil onto the 12" circle. The key with the toppings is to have a light hand. Less is really more.
Add the Cremini mushrooms, sautéed onions, asiago cheese, parmesan cheese, and machaca on the pizza.
Bake in a pizza oven until puffy and golden brown or in a 450°F oven.
Top with rosemary and shaved parmesan. Sprinkle more Machaca as desired and enjoy
