I’d like to offer some sincere feedback on the jerky I recently purchased. The large slabs had excellent texture—tough and chewy, which is exactly what I look for in traditional jerky. I truly appreciated that aspect.However, I also tried nearly every flavor from the small-batch line, and unfortunately none of them resonated with me. In my opinion, the overall sweetness was overwhelming across the board. The Old Fashioned flavor, with all due respect, had an aroma and taste that I personally found unpleasant.
The Yaki slabs were closer to what I enjoy, but still sweeter than expected and carried an aroma that didn’t match the flavor profile. To me, the taste was reminiscent of a sweet onion. I believe reducing the sugar content by about 50% could greatly improve the balance, and that salt should play an equally important role in jerky seasoning.
This is simply my honest assessment. I’ve been making jerky at home for over 25 years
