Our Process

Real Tradition is Handmade

We take great pride in our process. It is testament to our tradition. We have purposely retained the handmade element in each step of our process. It is our way of preserving tradition, remembering our history, and ensuring the highest quality product. Simply put, things are done better by hand.

Step 1

Slicing

Whole muscle pieces of lean beef are trimmed by hand then sliced to proper size.

Step 2

Marinating

Spice blends & marinades from family recipes dating back to the 1920s are infused into the meat

Step 3

Laying

Each individual piece is laid by hand onto stainless steel racks

Step 4

Cooking

The meat is cooked & dried to enhance the natural flavors of the meat
