Machaca & the Keto Diet

The Mexican Breakfast Scramble is the right mix for the Keto diet, high protein/fat, low in carbs, and packed with flavor. An excellent option, fit for a Keto king!
Recipe: Keto-Friendly Mexican Breakfast Scramble
COOK TIME: 15 minutes
1/2 cup People’s Choice Machaca
1 tbsp. butter
3 large eggs
1/4 cup red onion, chopped
1/4 cup Roma tomato, chopped
1/8 cup jalapeño, chopped
1/4 cup cheddar cheese, shredded
1/3 cup avocado, sliced
Cilantro to garnish
Whisk eggs and set aside. Melt butter in a medium sized skillet. Sauté red onion, tomato, and jalapeño until lightly browned. Add Machaca and mix to cover vegetables. Sauté until warm. Add eggs to pan stirring to fully mix ingredients. Finish with cheese. Serve with avocado and garnish with cilantro.
