It has become a symbol for New Mexican culture. In fact, local legislators passed a law in 2012 that prohibits the sale of chile peppers with the label “New Mexican” unless actually grown in New Mexico. Only chile peppers grown in the town of Hatch can claim the eponymous moniker.
